The Perfect Weeknight Buffalo Cauliflower Tacos

Cauliflower buffalo wings are everyone’s favourite vegan alternative to game day, parties or appies. But what is better than cauliflower buffalo wings? Cauliflower buffalo tacos! These cauliflower buffalo tacos are perfect for a weeknight taco night as they only take 30 minutes. Make them on taco Tuesdays, family game nights or on your next weekend away. Simple, tasty and a meal everyone will love.

The Perfect Weeknight Cauliflower Tacos

Ingredients

Buffalo Cauliflower Tacos:

  • 1 cup flour
  • 1 cup milk of your choice
  • 1/4 teaspoon each garlic powder, salt, and pepper
  • 1 head cauliflower cut into florets
  • 3/4 cup hot sauce
  • shredded cabbage, carrots and radishes, or whatever crunchy veg you like
  • chopped fresh cilantro
  • tortillas

Avocado Crema

  • 2 avocados
  • 1 clove garlic
  • 1/4 cup greek yogurt (vegan yogurt works too)
  • 1/4 cup water
  • 1/2 teaspoon salt
  • squeeze of lime

Instructions

Preheat oven to 450 degrees. Whisk flour, milk, salt, pepper, and garlic powder. Dip cauliflower pieces in the batter and let excess drip off. Place on a parchment-lined baking sheet. Bake on an upper rack for 15-20 minutes until lightly crisped and browned. 

Gently toss the baked cauliflower in a bowl with the hot sauce. Return to pan. Bake for another 5-10 minutes. 

Mix all avocado crema ingredients in a food processor or blender until smooth. 

Toss the shredding cabbage and carrot with some of the avocado crema until it’s evenly coated. Build your tacos serve and enjoy.
