Wheat Berry Broccoli Salad with Lemon Vinaigrette
Ingredients:
- 1 large head of broccoli, chopped into florets
- 1 cup edamame
- 1 tablespoon olive oil
- ½ cup wheat berries
- ¼ cup quinoa
- 2 cups chopped kale
- 1 tablespoon pumpkin seeds
- ½ red onion
Lemon Vinaigrette
- 1 lemon, juiced
- 3 tablespoons olive oil
- 2 teaspoons Agave syrup or honey
- 1 teaspoon garlic powder
- 1 teaspoon Herbs de Provence
- Salt and pepper
