I don’t know about you, but once the holidays are over, I’m over the treats and I’m ready for veggies. 

One of the best ways to increase my veggie intake during these last few chilly months is through soup. Soup is wonderful for a variety of reasons. For starters, it’s a great way to use up what’s left in the fridge. Veggies that are nearing their time can be salvaged and made good as new when you use them in soups. Second, soup is a bargain. The bulk of soups is typically vegetables, grains, pulses, or leftover meat, all typically cheap ingredients or ways use up leftovers. Third, most soups, including all of the ones here, are incredibly healthy! Slow cooking your food can help draw out vitamins and minerals, and consuming well-cooked foods helps you to easily digest your food.

So if you’re like me, and are feeling a little post-holiday lethargic, get yourself set up for a healthy, energized year with these nutrient-rich, health-boosting soups!

Healing Turmeric, Lentil, and Farro Soup

Turmeric was the health buzzword of 2016 for good reason. Known for its powerful medicinal properties, anti-inflammatory compounds, and antioxidant capacity, people love it for more than the rich curry taste it infuses into dishes and drinks–golden milk, anyone? Paired with the plant-based protein of lentils and high fibre content of the ancient grain farro, the curry-esque soup truly is the healing concoction you need to bring you into a healthy, happy new year.

Between the extra treats, the drop-in regular healthy meals, and the frigid winter we’re experiencing this year, I can think of no better time for a immune-boosting soup. We love slow cooker soups because they are mega simple; they enrich flavour, and the act of slow cooking meat typically draws out a larger amount of vitamins and minerals. This hearty brew, filled with healthy slow-cooked beef, vegetables, and our favourite underdog grain, barley, which contains fiber, selenium, B vitamins, copper, chromium, phosphorus, magnesium, and niacin. The best part? You can literally throw your ingredients into the crock pot while you make your breakfast, and by evening your dinner is served!

Green Goddess Soup

The Green Goddess soup is a clean-eating, illness-fighting machine. Filled with nutrient rich ingredients like sweet potatoes, broccoli, and kale, the soup also contains healthy doses of garlic and ginger, important immune boosting foods. Don’t be scared off by the green hue, this soup might be just what the doctor ordered to get back to basics after an indulgent holiday season.
