5 Minute Blueberry Vinaigrette

If you were like me at the beginning of the pandemic, you stocked up on seeds and worked on your garden with all your time at home. You can’t get any more local than your own back yard!  

Now, the results are I have an endless supply of lettuce ready to be picked, eaten, and even shared among my friends. It is time to up your salad game. With local produce at its best, with all the different flavours and beautiful fruits, it is time to build the perfect salad filled with fresh greens, your favourite herbs, and local produce. To top it off add a little sweetness with this blueberry vinaigrette.

Note: This vinaigrette uses fresh blueberries that do go bad quickly, but there is enough acid in this dressing that you can safely eat it for a week when it is stored in an airtight container in the fridge.

5 Minute Blueberry Vinaigrette

Ingredients

1 cup fresh blueberries 

¼ cup balsamic vinegar 

2tbsp maple syrup 

1tbsp lemon juice 

½ cup olive oil  

Pinch of salt and pepper  


Instructions

Add all the ingredients to a blender and blend it until you get your desired texture. The longer you blend the smoother it will get.
