With local produce at its best, with all the different flavours and beautiful fruits, it is time to build the perfect salad filled with fresh greens, your favourite herbs, and local produce. Note: This vinaigrette uses fresh blueberries that do go bad quickly, but there is enough acid in this dressing that you can safely eat it for a week when it is stored in an airtight container in the fridge.
1 cup fresh blueberries
¼ cup balsamic vinegar
2tbsp maple syrup
1tbsp lemon juice
½ cup olive oil
Pinch of salt and pepper
Add all the ingredients to a blender and blend it until you get your desired texture. The longer you blend the smoother it will get.
