Note: This vinaigrette uses fresh blueberries that do go bad quickly, but there is enough acid in this dressing that you can safely eat it for a week when it is stored in an airtight container in the fridge.
5 Minute Blueberry Vinaigrette
Ingredients
1 cup fresh blueberries
1/4 cup balsamic vinegar
2tbsp maple syrup
1tbsp lemon juice
1/2 cup olive oil
Pinch of salt and pepper
Instructions
Add all the ingredients to a blender and blend it until you get your desired texture. The longer you blend the smoother it will get.
