I don’t know about you, but once the holidays are over, I’m over the treats and I’m ready for veggies.
One of the best ways to increase my veggie intake during these last few chilly months is through soup. Soup is wonderful for a variety of reasons. For starters, it’s a great way to use up what’s left in the fridge. Veggies that are nearing their time can be salvaged and made good as new when you use them in soups. Second, soup is a bargain. The bulk of soups is typically vegetables, grains, pulses, or leftover meat, all typically cheap ingredients or ways use up leftovers. Third, most soups, including all of the ones here, are incredibly healthy! Slow cooking your food can help draw out vitamins and minerals, and consuming well-cooked foods helps you to easily digest your food.
