This Mother’s Day, why not treat your Mom (or a motherly figure in your life) to a delicious breakfast or brunch! Whether you’re serving it up to mom in bed or elsewhere, these are some of our favourite never-fail recipes. Kids of all ages can get involved.
1. Lemon Blueberry Pancakes
Pancakes are a breakfast classic. This tasty version pairs zesty lemon with refreshing blueberries in a marriage that mom is going to love! Top with some greek yogurt or whipped cream, if you’re feeling fancy.
2. Yogurt Breakfast Parfaits
If younger kids are preparing breakfast, yogurt parfaits are a great option! Depending on their age, an adult can help with chopping up fruit and kids can layer the ingredients. These are best served in a larger tall glass, so you can see the pretty layers. Here are some ingredients you can include:
- yogurt (or a plant based alternative)
- granola or cereal
- fresh fruit (berries, grapes, apple, banana, pineapple)
3. Breakfast Cookies
If you’re an active family that’s going to head out for a hike or a bike ride before a leisurely lunch out, this is the breakfast for you! Whip up a batch of breakfast cookies for mom the night before and grab them on the way out the door.
4. Classic Breakfast
One of the first things I learned to cook on the stove was scrambled eggs. Pair that with some sourdough toast, local sausages or bacon, and you’ve got yourself a winner. It’s a classic for a reason.
5. Baked Oatmeal
Baked oatmeal comes together very easily! Serve it up with some cashew milk and berries and you’ll have a hearty and comforting brunch. Bonus: this recipe is great for the plant-based mother!
6. Overnight Oats
Maybe you have an action packed Mother’s Day planned? Even if you don’t, overnight oats are a delicious breaky. With no cooking and little to no chopping required, these are a great option for children of all ages to help out with! If you’re having a leisurely brunch, serve them up in a nice dish. If you’re on the go, pack them up in mason jars.
7. Glazed Fruit Tart
Want a Mother’s Day treat that’s not your run of the mill breakfast? A tart is the way to go. If there’s a time to make an extra effort, Mother’s Day is the day and this is totally worth the work.
8. Shakshuka
In the mood for a savoury and comforting brunch? Originating in North Africa, Shakshuka is a rich and flavourful dish. Bonus: it only requires one pan for cooking and serving! Dish it up to mom with a side of bread—like pita or challah.
9. Blueberry Streusel Muffins
Is there anything better than the smell of freshly baked goods in the morning? Served with a coffee and a fresh fruit salad, these sweet berry muffins are just the things to make Mom smile.
