9 BRUNCH RECIPES TO MAKE MOM THIS MOTHER’S DAY

This Mother’s Day, why not treat your Mom (or a motherly figure in your life) to a delicious breakfast or brunch! Whether you’re serving it up to mom in bed or elsewhere, these are some of our favourite never-fail recipes. Kids of all ages can get involved.

 

1. Lemon Blueberry Pancakes

Pancakes are a breakfast classic. This tasty version pairs zesty lemon with refreshing blueberries in a marriage that mom is going to love! Top with some greek yogurt or whipped cream, if you’re feeling fancy.

If younger kids are preparing breakfast, yogurt parfaits are a great option! Depending on their age, an adult can help with chopping up fruit and kids can layer the ingredients. One of the first things I learned to cook on the stove was scrambled eggs. Pair that with some sourdough toast, local sausages or bacon, and you’ve got yourself a winner. It’s a classic for a reason.

Baked oatmeal comes together very easily! Serve it up with some cashew milk and berries and you’ll have a hearty and comforting brunch. Bonus: this recipe is great for the plant-based mother!

Maybe you have an action packed Mother’s Day planned? Even if you don’t, overnight oats are a delicious breaky. With no cooking and little to no chopping required, these are a great option for children of all ages to help out with! If you’re having a leisurely brunch, serve them up in a nice dish. If you’re on the go, pack them up in mason jars.

Want a Mother’s Day treat that’s not your run of the mill breakfast? A tart is the way to go. If there’s a time to make an extra effort, Mother’s Day is the day and this is totally worth the work.

In the mood for a savoury and comforting brunch? Originating in North Africa, Shakshuka is a rich and flavourful dish. Bonus: it only requires one pan for cooking and serving! Dish it up to mom with a side of bread—like pita or challah.
