Throughout the Middle East, Syria is known to be the culinary hub of the region. Four years ago, with the influx of newcomers from Syria to BC, Tayybeh was launched with the mission of providing newly arrived Syrian women with employment, financial security, and the opportunity to build a community.
Secretly though, the say their hidden objective was to put Syrian food on Vancouver’s culinary map. And that they did — glowingly-reviewed by every food critic in the city, Tayybeh’s delicious homestyle recipes have taken the city by storm.
Today they share their falafel recipe with us:
🌱 Falafel 🌱
Ingredients:
4 cups of chickpeas (soaked overnight)
1/2 large onion
1 tbl minced garlic
1 tbl coriander
1 tsp cumin
1 tsp salt
1/2 tsp baking powder
5 grams baking soda
Steps:
Soak chickpeas overnight
Mix chickpeas with onion and garlic
Grind mix in grinder or food processor
Add remaining ingredients and mix
Heat oil to 375F
Use hand or mold to shape the falafel paste
Fry until crispy golden (3-5 mins)
