Can’t get enough ice cream on a sweltering summer day? Neither can I. It’s been around as early as 5th century BC, and has lasted millennia to become a very popular dessert, especially during the summer. Ice cream has been through countless viral trends thanks to social media. From charcoal ice cream, to ice creams in fish-shaped cones, to rolled ice cream, and even ones made with liquid nitrogen.
A fairly recent ice cream trend that I’ve come across is the ice cream taco. It’s simple–a slightly rolled cone in the shape of a taco shell with big scoops of ice cream and extravagant toppings. It’s perfect to make it your own, fun to make with your family and friends, and it’s a great way to take Taco Tuesday to another level.
Ice Cream Taco Shell
The ice cream taco shell is easy to make or substitute. You can use thin flour tortillas, or make your own with any crepe or pancake recipe–just keep it thin! Alternatively, try this delicious chocolate shell that will actually stay in a curved shape.
Ingredients:
1/4 cup flour
3 Tbsp cacao powder
Pinch of salt
3 Tbsp butter softened at room temperature
1/4 cup sugar
2 egg whites
1/8 tsp vanilla extract
How to prepare:
- Preheat the oven to 350℉. In a bowl, mix the flour, cacao powder, and salt. In a separate bowl, add in butter and sugar, and use a mixer to blend for 2 minutes. Add in the vanilla extract and egg whites, and continue beating a low speed until even before adding the flour mixture. Blend on low until even again.
- On a parchment-lined baking sheet, place 3 Tbsp of dough onto the baking sheet, ensuring that there are enough room in between to allow them to spread out without touching each other. Use a spatula to spread out the dough evenly.
- Bake until the dough for 10-12 minutes or until the dough is firm. Using parchment paper to cover a rounded object, preferably a rolling pin, drape each warm taco shell over until they cool and hold shape.

Ice cream tacos are meant to be fun, so make it as extravagant as you like. Pair flavours that complement each other, and don’t be afraid to use fresh ingredients.
- Coconut ice cream with fresh pineapples topped with shredded toasted coconut.
- Ice cream topped with crushed pistachios and drizzled with melted chocolate.
- Caramel ice cream with caramel drizzle and a pinch of salt.
- Green tea ice cream with fresh strawberries and fresh basil–fruit salsa, anyone?
- Rhubarb sorbet with fresh kiwi drizzled with honey.
