In case you hadn’t noticed, we’ve been a bit obsessed with grilling fruit this summer. Peaches are no exception – when cooked over a flame, their natural juiciness and sweetness intensifies. This even works if your peaches happen to be a little less-than-delicious to begin with. Peaches that are slightly firm, maybe even a bit underripe, are best for this style of cooking.
We’ve added some honey-infused balsamic and rosemary to these peaches. They’d be great in either sweet or savoury dishes, but my favourite way to eat them is as-is, right off the grill.
Balsamic Grilled Peaches
Ingredients
peaches, sliced
coconut oil
fresh rosemary, chopped
honey-infused balsamic vinegar
salt
goat cheese for crumbling
Instructions
Drizzle sliced peaches with coconut oil and sprinkle the chopped rosemary over them.
Place peaches on a hot grill and cook, turning periodically, until they are caramelized.
Remove from heat, top with crumbled goat cheese, and sprinkle honey-infused balsamic and sea salt over top.
Serve with vanilla ice cream, on top of a green salad or grilled chicken, or eat them on their own.
