Mango Salsa

Preparation Time: 10 minutes | Cooking Time: 5 minutes | Serves: 2 people

Ingredients:

  • 2 cups chopped mango
  • 3/4 cup chopped bell pepper (any colour)
  • 1/3 cup chopped red onion
  • 1 small, ripe avocado, chopped
  • 1/4 cup chopped fresh cilantro
  • 2 tablespoons fresh lemon
  • 2 teaspoons olive oil
  • Salt to taste
  • Pepper to taste

Directions:

  • Mix all ingredients in a small bowl. Season with salt and pepper.
  • Cover and refrigerate.
