BLC

There’s really no wrong way to include bacon in a sandwich, is there? And I would also argue there’s no wrong way to enjoy cherries. So maybe it makes sense that the BLC (bacon, lettuce, and cherry sandwich) is the rightest way we’ve discovered yet to do both. Cherries are just coming into season, so take advantage with the new and improved summer version of the BLT.

I tested this on some (willing) subjects on the office, and the feedback was both surprise and delight. I find it’s quite rewarding to introduce people to new flavour combos they mightn’t have come up with on their own, and if you feel the same way, I highly recommend the BLC to you for your next picnic or potluck.

Cherries in a sandwich may seem like a pretty wacky idea, but the execution is pretty straightforward. Slice some cherries, cook some bacon, toast some bread and you’re ready to roll.

THE BLC

Ingredients

2 slices hearty bread

2 tbsp creamy goat cheese

3-4 slices cooked bacon

1 lettuce leaf

10 cherries, pitted and halved

Directions

Ok, this is sandwich making, not rocket science. I’m confident that most of you are familiar with the ins and outs of sandwich construction, so I’ll keep this simple.

  1. spread goat cheese evenly on the toasted bread
  2. top one slice with bacon, halved cherries, and lettuce
  3. cover with the other slice, and enjoy!

It is important to note, the cherries will want to roll out of the sandwich, so cutting it in half before eating it is an valuable step. It’s best eaten right away to prevent sogginess, so try to leave assembly to the last minute if possible. AND if you’re intrigued but don’t eat bacon, don’t worry! There are tons of plant-based bacon alternatives that would be just as delicious.
