What Does This Vegan Consider a Necessary Staple?
We are all faced with those moments when we have an unexpected dinner guest or that time when we throw a last minute dinner party. In order to be able to present a yummy meal, there are some items that I keep on hand for those moments. These are things I get in my Spud delivery as a standing order every other week (which saves me 5%) and ensures that for those last minute dinners, I am prepared.
I always have on hand Basil Pesto from Sunflower Kitchen; it is vegan, can be used in a multitude of ways and can turn any last minute meal into an elegant dinner. Last night, I was having company and wanted to make a creamy pasta sauce so to my basil pesto, I added a container of Spread Em Cashew Cultured Cream Cheese Style Garlic and Chives (also a bi-weekly standing order).
Oh my…what a delicious surprise! I had already chopped up a red pepper, some mushrooms and some Kalamata olives which I quickly stir-fried before adding the pesto and Spread Em. I used Brown Rice spirals and voila, in about 20 minutes from start to finish I served up an elegant, gluten free, vegan meal which looked and tasted like I had spent hours in the kitchen!
This was so easy, so delicious and so very well received that I felt the need to share it. Never be caught without a few wonderful ingredients by including them in your standing orders with Spud and save 5% in the process!
