Whether you are allergic to eggs, vegan, or just ran out, chia eggs are a fantastic alternative to the real thing.
To make one egg replacer, just grind up 1 tbsp chia seeds using a spice grinder or mortar and pestle, and add 3tbsp of water. Let it sit for 5 minutes or until it has a goopy texture, like an egg. Use this mixture in place of one egg – multiply if you need more than one. Make sure you store any extra chia seeds in a sealed container in the freezer, so they don’t go rancid.
The best part? Chia eggs are super good for you!
