Turkey Lentil Salad

Once you’ve satisfied your spirit with stuffing, gravy, pastry and the rest of the Thanksgiving goodies, you might want to throw in a “clean” meal to get back on the healthy eating track. Lentils tossed into a salad with leftover scraps of meat make an awesome, nutritious, satisfying meal! The more colour in your salad, the larger the variety of vitamins, minerals and other nutrients, so get creative with what you’ve got on hand.

Ingredients:
1 c. shredded turkey
1 c. cooked lentils (black or green) tossed with a little olive oil and butter, and seasoned with a little salt and pepper
6 handfuls mixed greens (kale, chard, arugula, romaine, butter lettuce)
1/2 c. raw carrot, grated
1/2 c. raw beets, grated
1/2 c. cucumber, chopped
1/2 c. red pepper or tomato, chopped
1 handful parsley or cilantro
2 tbsp. olive oil
1 tbsp. balsamic or apple cider vinegar
flaky sea salt and cracked pepper, to taste

Directions:
1) Combine all ingredients in large serving bowl and gently toss together.
2) Enjoy. 🙂
