Keep cool in sweet summer style with this refreshing raspberry lemonade. This also lends itself quite well to cocktails, if you’re so inclined.
10 sliced lemons
2 cups raspberries
1 ½ cups sweetener
6 cups water
Mint, for garnish
Zest two lemons. Squeeze lemons, reserving juice. Place raspberries, lemon zest, and sweetener of choice in a bowl. Using a masher or a wooden spoon, mash together to extract juice (or place in a blender with a bit of water and one sliced lemon). Add in water. Pour through a sieve, and press to extract all the liquid from the mixture. Mix in lemon juice.
Serve this with plenty of ice, or add in your favourite spirit.
