SPICE IT UP: Apricot Herb Salsa

Heat up your BBQ with this sweet hot apricot salsa.

Juice from two oranges

½ cup apple cider vinegar

1 ½ tsp kosher salt

1 ½ lbs apricots, chopped coarsely

2 cloves garlic, finely minced

1 jalapeno, deseeded and finely minced

2 tbsp red onion (optional)

¼ c chopped fresh mint

¼ c chopped fresh cilantro


In a medium sized pot, boil orange juice until it thickens to a syrup. Add vinegar and salt, stirring to dissolve.

Add the rest of the ingredients except for the mint and cilantro. Bring back to a boil. Reduce heat. Cover and cook until apricots are softened.

Let your salsa cool. Add mint and cilantro, then refrigerate overnight.
