Soup for this Stormy Weather

 

Well, the fall has arrived and with it comes the rain, the cold and the storms. When the weather is like this, I want to curl up with a good book and stay warm. What better way to stay warm and nourish the body than with a great soup. This soup is one of my favourites because it is hearty, super easy to prepare and delicious. Enjoy!

 

Potato Leek Soup

 

1 large onion, diced

1 shallot, diced

3 cloves of garlic, chopped

3 large carrots, sliced

3-4 stalks of celery, sliced

2-3 leeks, whites, sliced until you get to the tougher green stems

(be sure to clean leaks well as often there is sand between layers as you get closer to green stems)

5-6 medium to large potatoes peeled and diced

3-4 TB avocado or other tasteless oil

6-8 cups of a good veggie broth

Salt and pepper to taste

 

In a heavy pot, add all vegetables to oil in pot. Over gentle heat, stir fry them until onions, leeks soften. Potatoes may start to stick so be sure to stir this well. Add vegetable broth to pot and simmer mixture for 45 minutes until potatoes are cooked well.

 

My husband likes this soup chunky so at this point, I stir it well and add salt and pepper to taste however, this can also be blended with an immersion or hand blender to make it thick and creamy.

 

Serving this with some good bread and a side salad makes this an excellent, warming meal!

 

This can be made in advance and rewarmed before serving.
