Owen Petersen owns and operates Edmonton’s only location of the Prairie Mill Bread Company. Since 2008 he has been milling his own premium wheat and baking up hearty loaves of whole grain breads and rolls. Trained as a miller and baker in Calgary, Owen moved to Edmonton to try his luck operating an independent bakery and has done amazingly well. He credits his technique to John and Karen Juurlink, founders of Prairie Mill in Calgary and recipients of the Premier’s Alberta Food for Health Award, particularly for their use of stone-ground Alberta flour and local honey. Owen sources his wheat at an organic farm in Saskatchewan and ads locally produced Edmonton honey and sunflower seeds to the mix.
