Sometimes you just need one serving of cake ASAP – that’s where this little blueberry mug cake comes in!
Ingredients:
4 tbsp flour
1/4 tsp baking powder
2 tsp sugar
3 tbsp milk
1/2 tbsp coconut oil
1/4 tsp vanilla extract
Small handful of blueberries
Directions:
Mix all the ingredients except blueberries in a microwave-safe mug with a little whisk or fork.
Stir in blueberries, making sure you don’t leave them on top (they will explode)
Cook in microwave for one minute. If cake is not yet cooked, give it another 10 seconds. Let it cool for a couple minutes before eating it.
