1/2 head of green cabbage
4 celery stalks, sliced
2 green onions, sliced
1 large carrot, matchstick
1 chili, sliced
1 cup cilantro leaves
1 cup shredded cooked turkey meat
1/2 cup coarsely chopped salted peanuts
2 teaspoons sesame seeds
Slice up the green cabbage and place in a bowl with a pinch of salt. Massage the salt into the cabbage, this will release the water from the cabbage and soften it as well.
Slice and dice all the vegetables and cilantro leaves. Shred the turkey. Coarsely chop the peanuts and roast in a saucepan over medium heat.
Toss all the ingredients together and top with Little Creek Asian Apricot dressing and sesame seeds and enjoy!
