A gluten free diet is one that excludes the protein gluten. Gluten is found in grains such as wheat, barley, rye and triticale (a cross between wheat and rye). A gluten free diet is used to treat celiac, an inflammatory genetic condition that affects the small intestines of celiacs. Although the gluten free diet is initially challenging, it has become much easier as awareness and diagnosis of celiac disease are on the rise.
