Voted by the Georgia Strait as the best bagels in Vancouver year after year, Siegel’s bagels are truly authentic Montreal-style bagels. Siegel’s bagels are kettle boiled and then baked in a custom designed 25 ton wood- burning oven, giving the bagels a unique smoky flavor and a soft, chewy center.
Founder, Joel Siegel grew up eating bagels in Montreal. When Joel moved to Vancouver in the 70’s he realized how hard it was to find a decent bagel in Vancouver. So, Joel returned to Montreal to work in a bagel shop where he learned the art of making authentic bagels.
In 1990, Siegel’s Bagels opened its first location in Kitsilano where they commissioned a brick mason to build the brick and concrete wood-burning oven. Soon after the second location in Richmond was opened and then a third location on Granville Island followed in March of 2000.
Why are Siegles bagles boiled? Because the boiling process stops the bagels from rising which normally occurs in other breads and rolls. This is what makes a bagel crunchy on the outside and chewy on the inside. Some bagel factories skip the boiling process and just steam their bagels. This makes the bagel taste more like a roll with a hole in it.
