Description
This simple vegan ranch will have you converted! Instead of using traditional mayonnaise, it uses cashews and fresh herbs for bright and creamy flavours.

- 1 cup raw cashews soaked overnight and drained
- 3/4 cup water
- 1 tbsp apple cider vinegar
- 1 tbsp fresh-squeezed lemon juice
- 1 clove garlic minced
- 1 tsp onion powder
- 1 tsp sea salt
- 1 tbsp fresh chives finely chopped
- 1 tbsp fresh parsley finely chopped
- 1/2 tsp fresh dill finely chopped
Instructions
- In a blender, add all ingredients except the fresh herbs. Blend on high for about 45 seconds until it’s creamy with a smooth consistency.
- Pour into a bowl and stir in the fresh herbs until it’s well mixed. Add more herbs to taste before serving.
