Grilled lamb kebabs made with ground lamb, served with a side of garlic yogurt dressing and a fresh herb salad

Lamb Kebabs

  • 1 lb. ground lamb
  • 1 small onion, finely chopped
  • 2 garlic cloves, minced
  • 2 tablespoons chopped fresh parsley
  • 1 tablespoon chopped fresh mint
  • 1 tablespoon chopped fresh cilantro
  • 1 teaspoon ground cumin
  • 1/2 teaspoon ground coriander
  • Salt and freshly ground black pepper
  • 68 skewers, soaked in water for 30 minutes

Ingredients for the Garlic Yogurt Dressing:

  • 1 cup plain Greek yogurt
  • 2 garlic cloves, minced
  • 2 tablespoons chopped fresh mint
  • Salt and freshly ground black pepper

Ingredients for the Fresh Herb Salad:

  • 2 cups mixed greens
  • 1/4 cup chopped fresh parsley
  • 1/4 cup chopped fresh mint
  • 1/4 cup chopped fresh cilantro
  • 1 tablespoon lemon juice
  • 1 tablespoon olive oil
  • Salt and freshly ground black pepper

Instructions

In a large bowl, combine the ground lamb, onion, garlic, parsley, mint, cilantro, cumin, coriander, salt, and black pepper. Mix well to combine.

Divide the lamb mixture into 6-8 equal portions and shape each portion into a long sausage shape around a skewer.

Preheat your grill to medium-high heat. Grill the lamb kebabs for 8-10 minutes, turning occasionally, until cooked through and lightly charred.

While the lamb kebabs are grilling, make the garlic yogurt dressing. In a small bowl, whisk together the Greek yogurt, garlic, mint, salt, and black pepper until smooth.

To make the fresh herb salad, combine the mixed greens, parsley, mint, cilantro, lemon juice, olive oil, salt, and black pepper in a large bowl. Toss to combine.

Serve the grilled lamb kebabs with the garlic yogurt dressing on the side and the fresh herb salad alongside.
