Black Forest Ice Box Cake


Ingredients

1 lb cherries, pitted and coarsely chopped
• 500 ml whipping cream
• 1/2 cup cream cheese, at room temp
• 1/4 cup icing sugar
• Chocolate graham crackers/wafers


Instructions

In a large bowl, beat the whipping cream, cream cheese, and icing sugar until stiff peaks form.

In a 9×6 baking dish, lay down one layer of graham crackers and top with half of the cream mixture, then a layer of half of the chopped cherries. Repeat with another layer of crackers, the remaining cream, then the remaining cherries.

Cover and place in the fridge for minimum 6 hours, or overnight.

When ready to serve, remove from the fridge and top with fresh whipped cream, chocolate shavings, and cherries. Enjoy!
