Ingredients

- 1 large eggplant
- 1 red bell pepper
- 1 cup cherry tomatoes
- basil
- mint
- pickled onions (optional)
- feta cheese
- 2 tbsp olive oil
- 1 tbsp lemon juice
- 2 tbsp garlic
- 1 tsp za’tar
- salt and pepper
Instructions
- Chop eggplant and pepper, drizzle with olive oil, salt and pepper
- Grill on a grill pan or bbq for 3-5 minutes each side
- Chop into pieces and toss with the dressing
- Add in pickled onion, herbs, feta and cherry tomatoes – enjoy!
