HOW OUR RESIDENT VEGAN USES IMPERFECT PRODUCE

 

If you haven’t already checked out the items and great prices of Spud’s new imperfect produce, I can’t recommend them enough. As I mentioned in a previous post, the overripe imperfect bananas are an awesome deal and in my opinion, far from being overripe. As long as you have room in your freezer, they can be frozen and used any time in breads, muffins, cakes, smoothies and homemade vegan ice cream.

 

Likewise the imperfect apples are great for eating, juicing, cooking and baking in a multitude of recipes. It takes me less than 20 minutes to make an apple or fruit crisp (a recipe I have featured earlier) and at this time of year, I add cranberries for colour and tartness.

 

Imperfect potatoes can be used regardless of their blemishes in any of your favourite recipes; scalloped, mashed, fried, boiled and baked (the list is endless). For money saving possibilities for organic produce, Imperfect Produce is hard to beat.

 

When you get your bananas, peel them, slice them and freeze them for later use. If you want a healthy treat here is a super easy yummy snack for you and your kids.

 

Peanut Butter and Banana Bite Size “Sandwiches”

 

Banana slices

Peanut Butter

Chocolate Chips (optional)

 

Spoon a teaspoon (or more) of peanut butter onto a banana slice

Top with another banana slice and place on tray that you can put in your freezer

Repeat this process until you have several “Sandwiches”

Freeze for an hour and enjoy as a frozen snack

 

Optionally, melt 1 cup of vegan chocolate chips with 3 Tb. of coconut oil

Dip each “sandwich” in the melted chocolate mixture before placing on tray.

Freeze for an hour and enjoy as a frozen chocolatey snack.
