3 Holiday Pancake Recipes That Will Make You Flip

Have you exhausted all your creative cooking juices on planning the perfect holiday dinner spread? We know you have appetizers covered. But have you thought about what you’re going to munch for breakfast over the holidays? We’ve got your back! (Not that these tasty flapjacks are limited to the holidays – whip them up on any ol’ frosty Sunday.) With this Holiday Oat Pancakes! 

 

With the whole grain goodness of oats, these hearty pancakes are not overly fluffy, but packed with minerals and fibre. They’re easy to whip up – especially if you have a griddle that can cook a few at a time. Bonus: they’re vegan and actually pretty healthy!

Gingerbread Pancake + 2 other oat pancakes

 


1. Gingerbread Oat Pancakes

  • ½ cup oat flour (blend rolled oats)
  • ½ cup unbleached all purpose flour
  • 1 tsp baking powder
  • ¼ tsp salt
  • 1 tbs coconut sugar (or brown sugar)
  • 1 tsp cinnamon
  • 1/2 tsp powdered ginger
  • ¼ tsp powdered cloves
  • ¼ tsp nutmeg
  • 1 cup almond milk (or other plant milk)
  • 1 tsp vanilla extract
  • 2 tbs molasses

2. Chocolate Peppermint Oat Pancakes

  • ½ cup oat flour (blend rolled oats)
  • ½ cup unbleached all purpose flour
  • 1 tsp baking powder
  • ¼ tsp salt
  • 3 tbs cocoa powder
  • 3 tbs small dark chocolate chips
  • 1 cup almond milk
  • 2 tbs maple syrup
  • 1 tsp vanilla extract
  • ¼ tsp peppermint extract (can go up to ½ tsp if you’re really into peppermint, like me!)

3. Apple Cranberry Oat Pancakes

  • ½ cup oat flour (blend rolled oats)
  • ½ cup unbleached all purpose flour
  • 1.5 tsp baking powder
  • ¼ tsp salt
  • 1 tsp cinnamon
  • 1 cup almond milk
  • 1 tsp orange zest
  • ½ grated apple (Granny Smith is great!)
  • 2 tbs maple syrup
  • ¼ cup dried cranberries
