5 EASY AND HEALTHY TWO-MINUTE BREAKFAST IN A MUG RECIPES

You fell asleep with the TV on, and your alarm didn’t go off. Now you’re rushing out of bed at half past eight while scrambling to put pieces of clothing together and still look presentable. We’ve all been there. And the worst part is, you’re about to leave your house on an empty stomach. You might be hating yourself a little bit for not preparing overnight oats or making a chia pudding the night before, but don’t let hanger (aka hungry and anger) beat you. There are actually some really great recipes you can make on-the-go in minutes, in a mug, to salvage your morning.

In order to pull all of this off, you will need your good ol’ trusty microwave. And before you crucify me for suggesting that you cook the most important meal of the day with a machine that kills nutrients, don’t. Because according to Harvard Health Publications, microwave actually preserves many nutrients better than other forms of cooking due to its short heat exposure. So let’s put this time-saving, nutrient-preserving, hanger-curing exquisite engineering to good use with these quick breakfast in a mug recipes.

Quick and Easy Breakfast in a Mug Recipes

1. French Toast in a Mug

This recipe is super easy, and you’ll be on the go by the time your coffee finishes brewing.

Ingredients:

2-3 slices of bread

1 egg

3 tbsp whole milk

1 tbsp butter

Dash of cinnamon

Few drops of vanilla extract

Maple syrup

How to prepare:

  1. Place the butter in a large mug, and allow it to soften. Cut the bread into cubes and place them in the mug.
  2. In a separate bowl, whisk all the remaining ingredients except for maple syrup until smooth.
  3. Pour the mixture into the large mug and allow the bread to soak the mixture.
  4. Place in the microwave for 1 minutes, and heating it up 10 seconds at a time until the egg is no longer runny. This shouldn’t take more than 2 minutes in total!
  5. Drizzle some maple syrup on top, and you’re good to go! If your mug has a lid, even better!

2. Cheesy Scrambled Eggs in a Mug

This recipe is almost too easy. It not only takes almost no time to cook, it also takes almost no time to prepare.

Ingredients:

2 eggs

2 tbsp milk

2 tbsp cheese diced or shredded

Salt and pepper

How to prepare:

  1. Whisk the eggs and milk together. Pour the mixture into a mug and microwave for 45 seconds. Stir it up a bit, then put it back in the microwave for another 30 seconds or so.
  2. Top the egg off with cheese, salt, and pepper, and scramble it up to allow the cheese to melt a bit. Have an egg-cellent morning!

3. Blueberry Pancake in a Mug

Possibly the most annoying thing about making pancakes is that it’s a lot of work and takes a lot of time to cook for just one. This pancake-in-a-mug recipe will save time and effort!

Ingredients:

4 tbsp all-purpose flour

1/4 tsp baking powder

2 tsp maple syrup

1 tbsp whole milk

1 tbsp butter

1 egg

1 tbsp fresh blueberries

How to prepare:

  1. Whisk all ingredients except for strawberries together until the mixture is smooth.
  2. Add in the strawberries and gently stir to evenly distribute it in the mixture.
  3. Microwave for about 1 minute. The top should be firm. If not, put it back in the microwave for 10 seconds at a time.
  4. Top with some maple syrup and more strawberries and enjoy!

4. Flax Oatmeal in a Mug

You don’t need overnight oats or cook up an entire pot in the morning to enjoy oatmeal for breakfast.

Ingredients:

1/2 cup quick oats

1 tbsp ground flax seed

1 egg

1/2 cup milk

1/4 cup banana, mashed

1/4 tsp cinnamon

1/4 cup apple, diced

2 tsp maple syrup

  1. In a large mug, mix everything except fruits and maple syrup until smooth and even. Add in the fruits and maple syrup, and stir until everything is evenly distributed.
  2. Microwave on high for 2 minutes. If it’s not ready, place it back in the microwave for 30 seconds at a time.

5. Vegan Apple Muffin in a Mug

Craving something sweet for breakfast? This apple muffin will not only do the trick, it’ll keep you full until lunch time!

Ingredients:

3 tbsp almond flour

1 tbsp coconut oil

4 tbsp applesauce

1/4 tsp vanilla

1 tsp maple syrup

1/2 tsp cinnamon

1/4 tsp baking powder

Pinch of salt

Few chunks of apple diced

  1. Place the coconut oil in a large mug and melt it slightly on low in the microwave.
  2. Add in applesauce, vanilla, maple syrup, and mix until even.
  3. Whisk in almond flour, cinnamon, baking powder, and salt, and stir until well-combined
  4. Stir in apple chunks into the mixture.
  5. Microwave for 1 minute and 15 seconds. If it’s not ready, place it back in the microwave for 15 seconds at a time.

Breakfast on-the-go doesn’t have to be hard or stressful. Once you get the grasp of these breakfast in a mug recipes, you’ll be able to whip something up in no time.
